My friend, Lexie, made this when she and Kyle had us over for a pumpkin carving party. It is similar to chili, but I like it a lot better. I have made it twice since then - once last night for our K-State watch party and it was a hit with everyone - including Derrick and my brother. I kept making the mistake of calling it Cowboy Soup, but I was mistaken. It's Taco Soup.
1 lb. ground turkey
1 med onion, chopped (optional)
1 pkg. taco seasoning
2 16 oz. cans diced tomatoes
1 can rotel
2 16 oz. can black beans (can also use pinto or kidney)
1 pkg. dry hidden valley ranch dressing mix
1 lg. pkg froz. corn or 2 cans corn
Brown turkey (with onion if using). Put in all other ingredients after meat is brown. Simmer on stove for 20 minutes or transfer to crock pot to keep warm. Serve with chips, cheese, and sour cream.
