S'mores Cookie Sandwiches


For a Friday Treat Day (we have them once a month), a coworker, Kylie, made these delicious cookies.  I have not made them yet, but can't wait to try them.  I love s'mores.  Keith even got me a make your own s'mores at home kit for Christmas!
Graham crackers broken into fourths
Marshmallows
Peanut butter
Semi-sweet baker's chocolate (the red box)

Spread peanut butter onto the graham crackers.  Then,  stick marshmallows into the microwave for about 15 seconds to soften them up.  Put the marshmallow on a graham cracker  and put another graham cracker on top.  Make sure the marshmallow is soft so the graham cracker sticks to it.  Then, melt the baker’s chocolate squares and dip the sandwiches into the melted chocolate.  Put them onto wax paper and then into the refrigerator to let the chocolate get hard.  Do not use chocolate chips because they do not work as well as the baking squares. 

Ice Cream Cake

My coworker, Michelle, made this cake this week for someone's birthday, and I was lucky enough to get a piece.  It was so delicious and reminded me of the Dairy Queen ice cream cakes except even beter!  I can't wait to make this for the next dinner party we have or go to or for someone's birthday!

The ingredients are for a 9x13 pan.  If you want to make it in a 9 inch pie plate, use approximately half the ingredients.

1 package regular oreos processed in food processor or chopped up
1 stick butter, melted
3 tablespoons sugar, optional
2 jars hot fudge
Gallon of chocolate chip ice cream (or desired flavor)
heath bars or butterfinger, chopped fine or toffee pieces

Set ice cream on the counter to thaw.  This may take 30 minutes to a couple hours.  Combine chopped oreos, melted butter, and sugar (optional).  Press in pan.  Put in freezer until ready for next step.  Microwave hot fudge for a few seconds until spreadable.  Spread over oreo layer.  Spoon softened ice cream over hot fudge.  Sprinkle toffee pieces on top.  Freeze.

Pizza Roll


I got this recipe from my coworker, Jenny, who was making it for her 5-year-old daughter's birthday with the extended family.  She made several different rolls with different fillings depending on what people liked.  Now it has become one of our regular meals.  I am not very much of a perfectionist (I should have Derrick do the crust part), and the pictures above are not even from one of my best rolls.  I'm sure yours will look much better!

1 Pillsbury pizza crust
half a jar of spaghetti sauce
2 cups mozzarella cheese
toppings: I use a pound of ground turkey with Italian seasonings which is what Derrick and I like. Some other options are: mushrooms, tomatoes, basil, sausage, hamburger, pepperoni, green peppers - basically anything you like on your pizza!

Prepare toppings (for example I brown the ground turkey with seasonings).  Spread out pizza crust horizontally on a greased cookie sheet so that some of it hangs over the edge.  (You will fold it over.)  Cover half of it with desired toppings, a 1/4 cup or less spaghetti sauce, and as much cheese as will fit!  If you put too much sauce, it will ooze out the sides, so just use a little and save the rest for dipping.  Fold the other half of the crust over the top and pinch the edges.  You can sprinkle a little extra cheese on top if desired.  Bake at 400 degrees for 10-15 minutes.  Heat extra sauce to dip.
