Red Russian Reindeer

Derrick was in charge of drinks this year which he is excellent at!  He has been researching drinks for several months to find the perfect Christmas Eve drinks!  This one is loosely based off of a drink that we ordered at the movie theater bar while waiting for our movie to start.  It is light, refreshing, sweet, and delicious!

Muddle raspberries with ice in each glass.  Add 1/4 sangria, 1/4 vodka, and top off with sprite.

Cranberry Feta Pinwheels

For Christmas Eve my parents have a smorgasbord of delicious appetizers all day instead of a big meal.  One of my contributions this year were these new Cranberry Feta Pinwheels that I found on Pinterest.  They were very popular and festive with the red and green!

1 package dried sweet cranberries
1 package cream cheese
1 cup crumbled feta
1/4 cup chopped green onion
large tortillas (preferably sun dried tomato flavor)

Combine all ingredients except tortillas.  Spread in a thin layer on tortillas.  Roll up and wrap tightly in saran wrap.  Refrigerate at least one hour.  Cut into 12 slices.

Creamy Chicken Taquitos

Another pinterest recipe - delicious!

3 cups cooked, shredded or diced chicken breast - rotisserie or make ahead in crock pot or buy precooked

6 ounces cream cheese, softened

1/3 cup sour cream (I used plain yogurt)

1/2 cup salsa

1 1/2 cups cheddar cheese

1 1/2 cups chopped fresh spinach

salt and pepper

10 soft taco size tortillas

oil for frying (I just used PAM cooking spray and sprayed between each batch)

Stir together the chicken, cream cheese, sour cream, salsa, cheese, and spinach.  Season with salt and pepper.

Spread 2-3 tablespoons mixture onto one half of tortilla.  Roll up and place seam side down on a platter.

Heat oil in a skillet on the stove. I was able to cook 4 taquitos at once.  Make sure to keep the lid on so they will cook all the way through.  When browned, turn to brown the other side.  Serve with salsa.
