Spanish Tortilla


I studied abroad in Salamanca, Spain the summer between my sophomore and junior years of college.  I loved the food in Spain, especially this traditional Spanish tortilla which is one of the most commonly served dishes in Spain.  I had it several times a week!  A lot of times it is sold at restaurants/bars as a bocadillo (little sandwich) - it is a triangle of tortilla between slices of a baguette.  Delicious.  I bought a cookbook of Spanish recipes while I was there and made this for my family when I came home.  My dad loves it.  He still requests it as often as possible.  I had never made it for Derrick yet, and he really liked it as well.

In Spain they sometimes serve it with sofrito, a tomato sauce.  We like it with siracha, salsa, or hot sauce.

6 medium potatoes, peeled
1 onion, optional
9 large eggs
olive oil
salt to taste

Peel the potatoes and slice in 1/8" slices.  If using an onion, chop and combine in a bowl with the potato slices.  Salt the mixture.

In a large pan heat a general amount of oil over medium heat.  I used 4-5 tablespoons. (It calls for much more than that.)  Spread the potatoes evenly in the skillet.  Leave in the pan until they can be easily broken with a spatula.  Then remove from the pan with a slotted spoon and drain.

Crack the eggs into a bowl and beat by hand.  Stir in potatoes.

Heat 2 tablespoons oil in the large pan.  Pour the egg potato mixture into the pan.  Spread out evenly.  Cover.  Allow to cook around 15 minutes until the edges look cooked.  Lift the tortilla to see if the bottom is browned.  The top should still be runny.

Take the pan to the sink.  Put a large dinner plate on top of the pan.  Flip with one hand on each side (with potholders).  Then slide the tortilla back into the pan to cook the other side.  Use a spatula to shape the sides.  Cover and cook 3-4 minutes.  Turn the heat off and let it sit 2 minutes.

Slide the tortilla onto a plate to serve.  Slice into 8 pieces like a pie and serve with sliced French bread on the side.


White Chocolate Puffs


My good friend, Sara Weishaar, brought this to our Book Club Christmas party.  It is addicting!  I love white chocolate covered popcorn which this reminds me of.  The cheddar puffs are sold at Trader Joe's.

1 bag Trader Joe's White Chocolate Cheddar Puffs
1 package white almond bark

Pour puffs into a large bowl.  Melt almond bark in microwave according to package directions.  Pour melted almond bark over puffs and toss to combine.  Pour onto wax paper to cool.  I think it would be good to drizzle with melted milk or dark chocolate or sprinkle with mini M&Ms.

Red Russian Reindeer


Derrick was in charge of drinks this year which he is excellent at!  He has been researching drinks for several months to find the perfect Christmas Eve drinks!  This one is loosely based off of a drink that we ordered at the movie theater bar while waiting for our movie to start.  It is light, refreshing, sweet, and delicious!

crushed ice
raspberries
Grey Goose Vodka
white sangria
sprite

Muddle raspberries with ice in each glass.  Add 1/4 sangria, 1/4 vodka, and top off with sprite.

Cranberry Feta Pinwheels


For Christmas Eve my parents have a smorgasbord of delicious appetizers all day instead of a big meal.  One of my contributions this year were these new Cranberry Feta Pinwheels that I found on Pinterest.  They were very popular and festive with the red and green!

1 package dried sweet cranberries
1 package cream cheese
1 cup crumbled feta
1/4 cup chopped green onion
large tortillas (preferably sun dried tomato flavor)

Combine all ingredients except tortillas.  Spread in a thin layer on tortillas.  Roll up and wrap tightly in saran wrap.  Refrigerate at least one hour.  Cut into 12 slices.

Creamy Chicken Taquitos

Another pinterest recipe - delicious!
3 cups cooked, shredded or diced chicken breast - rotisserie or make ahead in crock pot or buy precooked
6 ounces cream cheese, softened
1/3 cup sour cream (I used plain yogurt)
1/2 cup salsa
1 1/2 cups cheddar cheese
1 1/2 cups chopped fresh spinach
salt and pepper
10 soft taco size tortillas
oil for frying (I just used PAM cooking spray and sprayed between each batch)
Stir together the chicken, cream cheese, sour cream, salsa, cheese, and spinach.  Season with salt and pepper.

Spread 2-3 tablespoons mixture onto one half of tortilla.  Roll up and place seam side down on a platter.
Heat oil in a skillet on the stove. I was able to cook 4 taquitos at once.  Make sure to keep the lid on so they will cook all the way through.  When browned, turn to brown the other side.  Serve with salsa.

Toasted Cinnamon Sugar Nuts




My side dish for Thanksgiving dinner is a spinach salad.  I was going to add feta, cranberries, nuts, and raspberry vinaigrette.  I found these toasted sugary nuts on pinterest and thought they would be perfect to add to the salad.  They were quick and easy to make and made the house smell yummy!  And they taste delicious by themselves.  Hopefully they are good on the salad as well!
3 cups nuts (I used mostly pecans and some cashews)
1 egg white
1 tablespoon water
1/2 tablespoon vanilla
1/4 cup brown sugar
1/2 cup white sugar (I used only about 1/4 cup)
1/2 tablespoon cinnamon

In a small bowl, whip egg white with water until frothy.

Place nuts in a separate bowl.  Add vanilla and toss to combine.

Add the frothy egg white mixture to the bowl with the nuts and toss to combine.

Add the sugars and cinnamon to the bowl with the nuts and toss to combine.

Spread nuts onto a baking sheet lined with foil and sprayed with cooking spray.  Separate them as best as possible.  Bake at 350 degrees for 15-25 minutes.  They are done when they are aromatic and deeper in color.

Poke Cake



Happy Thanksgiving!

I had a difficult time thinking of a dessert to bring to Thanksgiving dinner at my wonderful in-laws!  I searched pinterest and found a Pumpkin Poke Cake.  It is the same as this Poke Cake except with a yellow cake mix/pumpkin cake in a 9x9 pan (the pumpkin is a substitute for the eggs, oil, and water on the cake mix box).  Then I decided that everyone would enjoy the regular chocolate version more.  Although the pumpkin one would have been very festive.  Maybe I will make it for Christmas...

1 chocolate cake mix plus ingredients on box
1 14 ounce can sweetened condensed milk
1 jar (8 ounces) caramel ice cream topping
1 container (8 ounces) cool whip
Crushed heath bars (I used 2 king sized)

Bake cake mix according to package directions in a 9x13 pan.  While still hot, poke holes in the cake with the end of a wooden spoon.  Drizzle sweetened condensed milk and caramel over cake.
Refrigerate for at least an hour until cool.  Top with cool whip and sprinkle with crushed heath bars.  Keep in refrigerator until ready to serve.
