Last Christmas I was having trouble thinking of what I should bring to Christmas dinner. A friend at work, Sheralyn, suggested this Cornbread Casserole that her family requests every holiday. We liked it so much I ended up making it for both family Christmases! And this year I made it for Derrick's family Thanksgiving, so here it finally is on the blog!
1 can whole corn, do not drain
1 can creamed corn
1 cup cheddar cheese
8 ounces sour cream
1 box, 8 1/2 ounces jiffy cornbread mix
1 egg
1 stick melted butter
Mix well. Pour into greased 9x13 pan.
Bake at 375 degrees for 45-60 minutes.
James is making this for his work Xmas lunch tomorrow! I hope he has leftovers so I can try it!
