This recipe came from one of the blogs I follow, Gina's Skinny Recipes. I love her blog because all of the recipes are healthy. This is a great alternative (even better I think!) to fried shrimp. It is much more flavorful as well. It was a little time consuming dredging all the little guys, but Derrick and I both liked it and agreed it was worth it.
1 lb shrimp, peeled and deveined
salt and pepper
2 beaten eggs
1/2 cup Italian seasoned breadcrumbs
1/4 cup grated Parmesan cheese
Olive oil cooking spray
The amounts of breadcrumbs and Parmesan are estimates because I had to add more several times. So keep them handy just in case.
Preheat oven to 450 degrees. Grease baking sheet. Put eggs in one bowl. Combine breadcrumbs and Parmesan in another bowl. Rinse and dry the shrimp. Season with salt and pepper. Coat in egg mixture. Then dredge in crumb mixture. Place on baking sheet and spray with cooking spray. Bake for about 8 minutes, then turn shrimp and cook another 3 minutes until cooked through. Remove shrimp and serve with lemon wedges or cocktail sauce if desired. We liked them just plain. We had them with a side of fettuccine and Alfredo sauce.
You can also place the breaded shrimp on a hoagie and top with marinara and cheese and toast under the broiler for an alternative.
