Banana Bread

I love sweet breads.  Derrick's mom makes really good Zucchini Bread homemade from her garden!  Lately (maybe it's the heat and humidity?) bananas seem to get too ripe way to fast to eat them, so I keep finding myself with tons of spotted bananas that end up getting thrown out since they're past the point I'll eat them.  Since I had some free time today, I decided to make them into something more delicious.  Now I don't think I'll ever be able to throw them out again, the banana bread is so good!

2 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
2 beaten eggs
5 medium mashed bananas (I just mash them on a plate with a fork - the more ripe they are, the better)
1 cup sugar
1/2 cup oil

Grease bottom and sides of one 9x5 or two 7 1/2x3 1/2 inch loaf pans.  Mix flour, baking powder, baking soda, spices, and a dash of salt.  Make a hole in the middle of the mixture.

Combine beaten eggs, mashed bananas, sugar, and oil.  Add it all at once to the flour mixture.  Stir until it is moistened.  It will be lumpy.  Pour into pans.

Bake at 350 degrees for about 40-45 minutes.  If you are using one pan it will probably take 55 to 60 minutes.  Test with a toothpick.  You can cover them with foil the last 15 minutes to prevent them from getting too brown.  Cool in pan for 10 minutes.  Remove from pan.

I am definitely freezing one loaf to take to the lake!
