Bloomin' Eggs

This is my 99th blog post!  I have been brainstorming for weeks about what my 100th entry should be since I want to do something special.  No good ideas yet... Let me know if you have a suggestion!
 
 

My parents love staying at bed and breakfasts.  One recently served these Bloomin' Eggs, so they got the recipe and made them for Keith and Marcie's Going Away Party July 4th weekend.  Everyone liked them, so I made them this past weekend at the Ozarks for Skye and Dan. 
I cooked them a little too long - you want the yolk to still be runny.  But they were still very popular!
Dan even finished them off that night after being on the water drinking all day, boating to 3 bars, and getting our faces melted by Member's Only at Toad's then boating back in the dark.  Pretty solid day!
 
On anther note, Keith, Marcie, and Jesse are on their way to Las Vegas!  They left this morning.  We were able to have dinner with them last night, but are missing them already!  They have a fun drive planned with several stops along the way to see some friends and some sights.
Ingredients
one dozen eggs
heavy whipping cream (or half and half)
24 strips of bacon (turkey or regular - see recipe variations below)
pepper and any other desired spices
If you are using turkey bacon, place two raw strips into each muffin cup to form a "shell".  If you are using regular bacon, fry the bacon slightly, then place the fried strips into the muffin cups.  This is because the turkey bacon will crisp up on its own in the oven, but regular bacon will not.  Derrick likes really crispy bacon, so next time I make his I will cook the bacon a little longer in a skillet first.
 
Crack one egg into each muffin cup on top of the bacon.  Add a tablespoon of cream to each.  Sprinkle with pepper and any other spices.
 
Bake in a 350 degree oven for 20 minutes.  This was a little too long for the lake oven - make sure to take them out when the whites are cooked but the yolks are still a little runny.
 
Unfortunately I did not take a picture after they were cooked!  I guess we will just have to make them again!
